Brace yourself, but I’m a little iffy on what a fritter is; and how it couples with basic vegetables. But I’m open to learning new things and all, it being a new year and the like. So there you go, 2021 right?!
- 2 cups raw, grated, or cooked mashed vegetables
- 1⁄4 cup grated onion or minced green onions
- 1 cup all-purpose flour or dry bread crumbs
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon freshly ground black pepper
- Unsweetened soy milk, as needed
- Canola or grapeseed oil, for frying
Preheat the oven to 250° F. In a large bowl, combine the vegetables with the onion. Add the flour, baking powder, salt, and pepper. Mix well. Add a little soy milk, if needed.
In a large nonstick skillet or griddle, heat a thin layer of oil over medium heat. Drop the fritter batter by the heaping tablespoonful onto the hot skillet. Cook, turning once, until browned on both sides, about 12 minutes. Transfer the cooked fritters to a heatproof platter and keep warm in the oven while you fry the rest. Serve immediately… Makes 4 to 6 servings.
